Encasing With Clay
I slip a plastic bag over a mixing bowl, then begin spreading clay on top of the bag. This allows me to keep both a clean bowl and my hand when I slip it between the bowl and plastic bag. After laying the wrapped fish onto the clay with one hand, I wrap the clay around the bundle from beneath it and add more clay until it is completely covered and ready to place on the coals.
